I think its all about how soft it is. You don't want a mango that is too mushy, but not too hard either. The mango I used in this recipe, wasn't ultra ripe, in fact it was a bit on the unripe side. Still, it tasted wonderful!

I wish I knew the trick to finding a ripe mango. This post gives me a hankering for mango-tomato salsa, for some reason.
