Swimming, Sloths and Snacks

A lot has happened since my last entry, check out our Adventure Blog for the journal entries.  Here’s a brief summary:

We bought a truck and have been traveling around the country a bit.  A few weeks ago, we spent some time in Puerto Viejo and ran into some friends down there who are traveling about South and Central America.  Here I am taking in the Carribean Coast, right before taking a swim.

Our friends made the long 6 hour drive back up to Cabanga with us, but we stopped at a sloth refuge along the way.  We all fell in love with these slow, solitary creatures.  They spend most of their time eating and sleeping, but when they are awake, they seem to wear a perpetual, curious smile.

Food has been a joy with our friends staying with us.  We’ve been eating a lot of yummy veggie food, a lot of it consisting of tomatoes and avocados and fresh, local cheeses.  I tend to go very easy on the dairy, if I eat it at all, but I have noticed that each place we buy cheese at is a little different.  Its good to know that it is freshly made from local cows nearby.  I have not been disappointed with any avocado I’ve had!  That goes for the papaya, mango and pineapple as well.  Here is a quick snack Joe and I put together.

A lot of time has been spent playing music and singing.  It was very nice to have someone else to sing with and I’m missing my singing partner already.  They moved on to Nicaragua two days ago, and we’re feeling a bit lonesome for them.  Joe and I are still taking things one day at a time, and things are looking up.  We have some plans for the next few months, which include a trip back to Utah in July.  We’ll probably spend about 2 weeks there, and then return to Costa Rica for the next few months.  I have to say, I’m really missing my kombucha right now.

  • I thought the cute creature in the pic was not real (lol). Anyway, you were very very right in choosing to eat only verggies, and those that will only give you health benefit rather than concentrate on processed foods. I'm an advocate of toxic-free and preservative-free food too.
