The Kitchenaide blender I’ve been using for the past 2 years suffered an accident when I tried to move it to Costa Rica. I wrapped it in bubble tape and then cushioned it against several layers of soft padding. It still didn’t survive the plane trip. When I opened my bag, I was met with several, jagged shards of the broken glass from the carafe. While down there, I bought the cheapest blender I could find down there, and I ended up leaving it for one of the neighbors to use. Joe and I both decided that when we got settled back in Utah, it was finally time to buy a serious blender.
I was so excited to open up my new Blendtec when it arrived a few days ago! Not only have I been without a decent blender for a long time, but I finally got a “smart” blender with a lot of gusto.
One of the first things we experimented with was another cracker recipe: corn chips
These crackers turned out a lot more soft and chewy than the tomato basil ones. I’m sure all the extra veggies in the chips have a lot to do with that. The flavor was incredible, with just the right amount of spice. We only made one sheet of these, so they were gobbled up very fast! Here is the recipe:
Corn sliced off of 3 ears

1 cup flax seeds

1/2 red onion

1 bell pepper

2 med tomatoes

2 cloves garlic

1 tbsp ground cumin

1 tsp ground coriander

Season to taste with salt, pepper and a splash of nama shoyu.
This time, everything went straight into the blender. Below, are the corn chips with chopped heirloom tomatoes.

Slightly sweet and packed with flavorful nutrition, these chips can go with anything! I bet they would make a great base for a raw tostada. I think I’ll have to try that next time.
The Blendtec is still getting plenty of action. Here I am putting together its first green smoothie!

Mid blend.

I love the how it speeds up and slows down all on its own.

The smoothies are perfectly creamy! It works fast, too. Last night I played around and made my first raw chocolate pie using a banana, an avocado, coconut oil, some orange juice and some spices. I couldn’t believe how soft and smooth it turned out. It reminded me a lot of pudding. Sorry, no pics of the dessert yet. Making nut milk should be a lot of fun with this new toy!
