Peach Salsa

Yes, I’ve been rolling in the beautiful abundance that is peach season, lately.  You may have experienced this subliminal pleasure on your own, if you’ve been frequenting the fruit stands and farmer’s markets.  Peaches are where its at, when it comes to flavor right now.  The taste is enough to make one swear off out of season fruits altogether.  The same principle goes for tomatoes.  One bite out of a ripe heirloom will ruin those pale, tasteless store bought romas forever.

It seems only natural that I would want to combine the two of these foods together into one delicious salsa.  I got the idea from mango salsa.  The color of mangos and peaches are quite similar, but the flavor is very different.  As it turns out, peaches are wonderful in this mix!  Here’s the recipe:

3-4 Peaches

6-8 Tomatoes

1/4 Red Onion

2-3 Chili Peppers

1 Bell Pepper

2-4 Garlic Cloves

1/2 Bunch Cilantro

2 Tbsp Honey

2 Tbsp Olive Oil

1 1/2 Tbsp Apple Cider Vinegar

Juice of 2 Limes

Roughly chop up all the vegetables and combine with the rest of the ingredients.  Transfer to a food processor or blender and pulse until ingredients are well incorporated.  Make sure you don’t over process, the salsa is really good when it still has a chunky texture to it.  And the result:

This salsa is so good, it didn’t last nearly long enough.  It’s an excellent dip for corn chips or flax crackers, too!  And the hot peppers worked much better here, than they did in the juice!
