I’ve been trying to incorporate a lot more raw food into my diet lately, as I haven’t been all raw for some time. I can definitely feel the difference when I eat better! It is almost as if a switch goes off and immediately I have a lot more energy. My food makes me feel light instead of heavy. I’m working on adding more and more raw food until I am completely ready to take the One Week Raw plunge again. And the moment is coming very soon. Sometimes it can be so easy to forget how satisfying a salad can be. Joe and I made a wonderful salad for lunch yesterday.

From my experience, adding some healthy fats to a salad can make all the difference in the world when it comes to feeling full and satisfied. Some of my favorites are avocado, nuts and extra virgin olive oil. Our lunch from yesterday had salad greens, onion, bell pepper, tomatoes, mushrooms, bean sprouts, avocado, raw cashews, orange juice and orange slices, some olive oil and a bit of balsamic vinaigrette. Herbs are a wonderful way to add some flavor, too! I had some Thai basil and mint in the fridge that I used for spring rolls. The flavor was amazing after chopping up a few leaves and adding them to the salad.

It is food like this that makes me excited to get back on the raw wagon. Simple, healthy, invigorating, but very delicious as well. I really can’t wait to get my body cleaned out as I embark on another raw journey. I know it is just what my body needs right now. That, and plenty of time playing outside in the snow. Joe and I went snowshoeing last night, and it was absolutely beautiful! I don’t have any pictures from last night, but here are a few from our previous snowshoe hike.
