Tropical Collard Green Smoothie

This smoothie was so incredibly easy.  So easy that even husband Joe commented that it was “easier than making coffee”.  And he was right!  After drinking this delicious smoothie, I didn’t even crave it, like I usually do.  Here is the recipe:

2 bananas

1 apple, sliced

2 collard green leaves

2 cups tropical frozen fruit

1 cup cold water

For this recipe, I first blended everything except the frozen fruit (mango, pineapple, papaya) and 1/2 the water.  This helps the blending process to move more efficiently.  Then I added everything else and blended about a minute longer until everything came out perfectly smooth.  This recipe makes enough for two large servings.

Being a dark, leafy green vegetable, collard greens are packed with nutrition!   With its high amounts of Vitamin A, K, as well its abundance in vital minerals such as calcium, this has become a major favorite in my smoothies.  I also love the fact that they flavor of the greens is quite mild.  While this smoothie looks as green as can be, all you can really taste is the wonderful sweetness from the fruits.
